Finally a new steak trend in the US is to eat really old meat. It seems an old Spanish tradition called “vaca-ve-a-ha” which means “old cow” has been around forever. Typically, steaks are harvested from two year old cattle. These steaks are taken from 8-12 year old cattle… some after they die of natural causes. Many claim it is more flavorful – but that might be aged a little too much for some steak lovers. None the less, look for it at high end steak houses in the near future.
